How Long to Bake Sweet Potatoes

By The Recipes by Mom kitchen · Last checked October 21, 2026 · Not kitchen-tested; see how our recipes are made

A whole, medium sweet potato typically bakes in 45 to 60 minutes in a 400°F (200°C) oven. If you cut it into 1-inch cubes, it will roast much faster, in about 20 to 30 minutes at 425°F (220°C).

The exact time depends on the oven temperature, the size of the whole potato, and the size of the pieces if you cut it. The accompanying chart provides starting points for different preparations. Use these as a guide and always check for doneness using the visual and texture cues described below.

How Long to Bake Sweet Potatoes: time chart

What Heat Time Done when
Whole medium sweet potato 350°F (175°C) 60 to 75 minutes Soft when squeezed
Whole medium sweet potato 400°F (200°C) 45 to 60 minutes Soft, juices caramelizing
1-inch cubes 425°F (220°C) 20 to 30 minutes Browned edges, tender

Good to know

  • Put a lined tray under whole sweet potatoes to catch dripping sugars
  • Prick the skins before baking

What changes the baking time

The most significant factors that determine how long a sweet potato needs to bake are its size and shape, and the oven temperature. A larger, thicker sweet potato will take longer to cook through than a smaller, thinner one. This is because heat needs more time to penetrate to the center.

Cutting a sweet potato into smaller, uniform pieces, such as 1-inch cubes, dramatically reduces the cooking time. The smaller pieces have a larger surface area exposed to the hot air of the oven, allowing them to cook much more quickly than a whole potato. Cutting pieces to a consistent size helps ensure they all cook evenly and are done at the same time.

A lower oven temperature, like 350°F (175°C), will cook the potato more slowly, requiring 60 to 75 minutes. A higher temperature of 400°F (200°C) speeds up the process. For cut pieces, an even higher heat of 425°F (220°C) is used to help the edges brown and caramelize while the inside becomes tender.

How to tell when it is done

There is no specific internal temperature for a fully cooked sweet potato. Instead, doneness is determined by texture. A whole baked sweet potato is ready when its flesh is completely soft. You can check this by carefully squeezing it with an oven mitt or piercing it deeply with a fork or skewer. There should be no resistance at the center. When baked at a higher temperature, you may also see the natural sugars bubbling out of the skin and caramelizing on the baking sheet.

For roasted sweet potato cubes, the signs of doneness are different. The cubes should be tender all the way through when pierced with a fork. Their edges should be visibly browned and slightly crispy, indicating that their sugars have caramelized.

Tips for better baking results

  • Prick the skin. Before baking a whole sweet potato, pierce the skin several times with a fork or knife. This allows steam to escape as it cooks, which prevents the potato from potentially bursting in the oven.
  • Catch drips. Sweet potatoes can release sugary juices while baking. To make cleanup easier, we suggest placing whole sweet potatoes on a baking sheet lined with foil or parchment paper.
  • Do not wrap in foil. Baking a sweet potato directly on the oven rack or on a baking sheet gives it a drier, fluffier texture. Wrapping it in foil before baking traps steam, resulting in a skin that is soft and wet rather than pleasantly firm.
